- In a large pot, over medium heat, melt butter. Add onion & celery to melted butter and sauté for about 5 min, until tender.
- Then add chicken broth, optional vegetable broth, noodles, cooked chicken pieces, carrots, and dash of basil, oregano, salt, pepper for taste.
- Add the water from boiling the chicken (as much as you would like) the more you add, the more you’ll have, but add bullion cubes to add the broth flavor. About 1 cube per 2 cups of water. I toss in about 4 cubes, but you can add as many or little as you’d like.
- Bring combination to a boil, then reduce heat to low, cover and simmer for 20 minutes.
- As long as the carrots and noodles are cooked through. TIP; I use this (see picture) to ensure carrots are sliced thin enough to be able to be cooked thoroughly for soup.
