- Take 1/2 cup Passata sauce

- Heat up the oil and Add the Garlic fry for 1 minute then the Aubergines
- Add the italian Herbs and the Parsley and then the chicken you will need more olive oil at tbis point
- When the chicken is cooked add salt,pepper, tomatoes. Add the passata sauce and mix
- Mix it all in and turn heat off and Serve.with a Pasta sprinkle the dried parsley on top
- I used Reginette semolina type pasta.
