  1. Prepare 2 big pieces Chicken Thigh
  2. Get Chicken Marinate
  3. Make ready 2 cloves Garlic
  4. Take 2 cloves Shallot
  5. Make ready 1/2 stalk Lemongrass
  6. Make ready 1 piece Ginger
  7. Take 1 tsp Coriander powder
  8. Get 1/2 tsp Cumin powder

  11. Prepare 3 tbsp Sweet Soya Sauce
  12. Get 3 tbsp Oil
  13. Get Dipping Sauce
  14. Prepare 1 stalk Lemongrass
  15. Get 1 piece Ginger
  16. Take 1/4 piece Onion
  17. Take 4 cloves Shallot
  18. Take 2 cloves Garlic
  19. Take 3 tsp Coriander Powder
  20. Get 2 tbsp Fish Sauce
  21. Prepare 1 tbsp Brown Sugar
  22. Prepare 75 g Water
  23. Get 75 g Peanut (chopped)
  24. Take 5 tbsp Vegetable oil
  25. Make ready 2 tbsp Soya Sauce
Steps to make Malaysian Chicken Satay:
  1. Blend the chicken marinate in a food processor until smooth
  2. Cut the chicken thigh into 2cm thickness strips. Marinate the chicken with the blended chicken marinate mixture in step 1, for 30 min or more, ideal if you can marinate it overnight
  3. Thread the chicken into ‘S’ shapes onto the bamboo skewers
  4. Prepare the dipping sauce : blend the lemongrass, ginger, onion, shallot, garlic in a food processor until smooth
  5. Heat up the pan with some oil, panfry the mixture in step 4, add coriander powder, fish sauce, chopped peanut, sugar, sweet soya sauce and water (little at a time). Panfry all until it form a paste. Leave it cool, top with some chopped peanuts
  6. Panfry the chicken on a big pan until cooked or bake in oven for 15 minutes at 200 C or until cooked (Turn the satay every 5 minutes and baste with some oil). Enjoy with the dipping sauce😋
